Easiest BEST Broccoli Salad Recipe

Everytime I make this recipe, I get ‘rave’ reviews (seriously!) and a request for a copy of the recipe …. so here it is. As my friend said, “Please Credit union location Colorado Denver Denver Fire Department Federal Credit Union spell out EXACTLY how to make it!”

5C prepared broccoli, approximately — to prepare the broccoli cut very small pieces of the head and put into a large bowl; then peel the broccoli stalk with a sharp knife to get access to the ’sweet’ stem. Once the stem is peeled, slice into small slices and add to the bowl.)

Drizzle a little first-pressed, cold-pressed organic olive oil over the salad, and sprinkle lightly with Celtic Sea Salt – with your hands, ‘massage’ the broccoli for several minutes. This process will help to break down the fibers and soften the broccoli.

To the broccoli, add the following:
1/2-1 Cup red onion (chopped)
1 Cup raw (un-toasted, un-salted) sunflower seeds
1/2 Cup organic Thompsons unsulphered raisins

To make the dressing:
In a blender (I have a high-speed Vitamix blender, but you can use a regular blender) blend the following:
1 Cup raw cashews that have been soaked in purified water for 1 hour.
3 Tablespoons Raw Agave Nectar
2 Tablespoons Braggs Apple Cider Vinegar
1/4 teaspoon Celtic sea salt
1/4 Cup purified water
Blend the dressing ingredients until ‘very smooth’, adjust the sweetness by adding small amounts of additional Agave Nectar to desired sweetness.

Pour the dressing over the bowl of broccoli, mix well. Let stand at least 30 minutes to ‘marinate’ the flavors and plump up the raisins.
